Plantain Tacos with Smokey Queso

Ingredients:

Plantains

  • 2 plantains (cut into slices)
  • Tbsp coconut oil
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1 tsp sea salt 
  • 1/8 tsp cayenne

Black Beans 

  • 15-ounce can black beans
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder 

Shells & Optional Toppings 

  • Corn tortillas 
  • Avocado
  • 1/2 slice red onion
  • Salsa
  • Lime juice
  • Cashew Creamery Smokey Queso 

Instructions

  • In a sauce pan heat beans and spices.
  • Once boiling turn temperature to low and simmer. Stirring occasionally.
  • Heat coconut oil in a skillet.
  • Toss plantains in spices and add to skillet once heated.
  • Sauté on for 3 minute on each side. Remove from heat and set aside.
  • Assemble tacos!
